BOUIKOS (LITTLE BULGARIAN CHEESY HERBY MORSELS) AND GRILLED FIGS WITH MASCARPONE
I’m that irritating person who will order a few sweet things for the table “to share” and then proceed to wield a spoon like an ungainly, hellbent gladiator. I write the fig recipe with that energy in mind. Plonk it down in the middle of the table after dinner with a couple of spoons and no plates, and you’ll see what I mean. It’ll turn into a scene from Game of Thrones. It doesn’t need to be about figs though - use any fruit you like. You’ll find the real magic in that caramelised fruity reduction left running through the mascarpone. Oooft.
Bouikos, herby, crisp, cheesy, little numbers, are a bit like the Bulgarian equivalent of a cheese straw, or a little crisp cheese scone.
